This is the first year we’ve bought coffees from the Santa Maria and Palermo areas in northern Huila. Nestled between Gaitania in Tolima and Inza Cauca.  It’s hidden far away but, someday we could tell that on the Nevado del Huila one great coffee would dwell and, we were right. The coffees  produced surrounding this mountain have just been mind blowing and we are super excited have to this coffee in our line up!

 

Ricardo Montano Tovar a sensei in his own right is one of a few exceptional producers in Palermero. In the village of El Mirador at Finca El Progresso Tovar grows this unique blend of Castillo and Caturra at 1580 masl.It is dry fermented for 18- 24 hours, washed and the dry on raised parabolic beds for approximately 12 days.  Producing big juicy flavors of Milks Chocolate, Mandarin orange, and evervescenes of cherry cola in the finish.

 

This is definitely a unique and rare coffee.  Only a few bags of this coffee exist making it a very rare specimen and, we managed to secure ten of them for our experimental genre.
