We are so very pleased to release our first coffee sourced through our friends at Azahar Coffee in Colombia. Azahar connects roasters like us with farmers in an open, transparent and respectful manner. They are making tremendous efforts to increase the profitability of those they work with by funding studies to evaluate the cost of production for each farm, and using that data to ensure farmers are able to make a profit on their crop. They gladly introduced us to this coffee, produced by Alirio Muñoz.
Alirio is 53 years old. He’s been farming coffee for as long as he can remember, having learned from his grandfather. Alirio manages his plants in a unique manner - he stumps his trees every seven years, allowing them to grow back to their full height and maximum production for a few years before stumping them again. It is not until they’ve lived for roughly one quarter of a century (or half of Alirio’s life) that he fully digs them out and replaces them with new trees. Over the past 10 years or so, he’s begun to teach the same husbandry and renewal practices to his kids, ensuring that his farm will produce top-notch coffee for years to come. By accessing a specialty market where price is based on quality and not quantity, Alirio sets an example of how Colombian farmers can make a stable living without having to abandon the countryside. He hopes that one day his kids may be able to say, “Thanks to my father and my grandfather, I am a coffee farmer because I learned how to be one from them.”
This lot is comprised of coffee from Alirio’s Caturra variety trees, cultivated at 1,700 m.a.s.l. Before being dried for 20 days on a parabolic dryer, it was fermented for a total of 36 hours. We feel that this processing best showcases the varieties and terroir of Alirio’s little rural neighborhood, El Carmen, making for a juicy, interesting and slightly fruity cup. We taste elegant notes of white peach, pluot, and honey graham. We are proud to share Alirio’s work with you and hope you enjoy it as much as we do!
