Cadillac Rainbows comes to us from the “Neighbors & Crops” program of renowned farm La Palma y El Tucan in Colombia. By sharing their technical know-how, processing facilities, and international connections with their neighbors, La Palma y El Tucan is helping farmers grow top-notch coffee and find the right roasters to share it with.
This specific coffee comes from a single coffee farmer, Juaquin Gutierrez and his farm “El Trapiche”. A coffee farmer for over 40 years, Juaquin grows Castillo and Colombia variety trees on his farm at 1,600 MASL in the region of Cundinamarca. Utilizing a lactic acid processing method that has been perfected by La Palma y El Tucan, Juaquin draws incredible complexity out of his coffee. We taste notes of strawberry and brown sugar, rounded out by a citric, tangerine-like acidity on the finish. Cadillac Rainbows is a veritable flying comet of flavor that you are sure to enjoy!
