Sourced through a direct relationship with our friends Shady and Elias Bayter at the Colombian Coffee Club, this decaffeinated coffee set out to be quite different. Traditionally, coffees were chosen to undergo decaffeination because they didn’t meet the quality specifications for regular, caffeinated specialty coffee.  Determined to define convention, the Bayters asked themselves, “If we choose to decaffeinate only the good quality beans, will it create a superior cup?”

The answer for us, is a resounding yes.

The sugarcane process uses a distilled sugarcane alcohol to extract the caffeine in this coffee while leaving all the flavor compounds intact. The resulting cup is sweet and clean with vibrant acidity. We enjoy drinking this coffee for its delicious flavor, and we don’t have to stop drinking it for fear of the jitters.
